Today I am sharing a favorite banana bread recipe in our home. My three year old asks at least once a week for me to make this. It is crazy easy to make and is dairy, gluten and (refined) sugar free! Ya’ll know I am all about cooking and baking free of gluten and refined sugar and it is a ONE BOWL and done recipe. I love simple and easy, and I try to avoid extra dishes where possible, always! I hope you will find this to be a new favorite in your home.
Growing up, my mom loved to bake sweets and treats and everyone looked forward to her chocolate chip cookies! We would come home from school and see the big yellow mixing bowl on the counter and know that her famous chocolate chip cookies were coming. Not sure there is a better smell in the home than that of chocolate cookies baking in the oven. Naturally, I too found a love for baking sweet treats for my family. When I first began cooking & baking, ya’ll I was SO bad. I could have recipe to follow TO A TEE, and somehow it still wouldn’t turn out. My poor husband endured some terrible meals in our early years, but was always so sweet about it, never complaining about my awful cooking. Thanks babe!
It wasn’t until after our son was born that we decided to make drastic changes to our diet that I really became determined to figure out this cooking and baking thing. Simply because most recipes would either have to be changed up accommodate or altered almost completely. It was in that that I feel I found myself in the kitchen if you will.
Now, most of my meals that I cook are not from a recipe book, but rather me just throwing various things together and experimenting. This particular recipe came as the result of me not having enough flour in the house one day. Hope you enjoy!
Banana Oat Bread
- 3 ripe bananas (medium sized)
- 3 eggs
- 1 cup pure maple syrup
- 1 tsp vanilla
- 1/3 cup EVOO
- 1 1/2 cups flour (I use this one)
- 1/2 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Heat oven to 375 degrees. Grease bread pan (I use evoo).
Beat eggs in bowl. Add maple syrup and vanilla. Mix well. Next add bananas (mash well), and evoo. Mix well. Add rest of ingredients to mix and mix well.
Pour into pan and bake 45 minutes or until toothpick comes out clear.
Let cool & Enjoy!
