Gluten Free, Dairy Free, Refined Sugar Free Banana Oat Bread
Ingredients
  • 3 ripe bananas medium sized
  • 3 eggs
  • 1 cup pure maple syrup
  • 1 tsp vanilla
  • 1/3 cup EVOO
  • 1 1/2 cups flour I use King Arthur GF mix
  • 1/2 cup rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
Instructions
  1. Heat oven to 375 degrees. Grease bread pan (I use evoo).
  2. Beat eggs in bowl. Add maple syrup and vanilla. Mix well. Next add bananas (mash well), and evoo. Mix well. Add rest of ingredients to mix and mix well.
  3. Pour into pan and bake 45 minutes or until toothpick comes out clear.
